  • Step 1

    Peel and pit the avocado and add the flesh to a mixing bowl. Finely dice the tomato, cucumber and onion and finely chop the cilantro. Add to the bowl with the avocado. Add the olive oil, lemon juice, salt and pepper.

    Roughly mash the chopped vegetables with the avocado, lemon juice and oil to create a chunky dip consistency. Refrigerate until ready to serve.
