Low Carb Sardine Fried Rice

This Keto-friendly recipe has been inspired by Indonesian fried rice, Nasi Goreng- but with a low carb twist! Our tasty Keto main has been prepared with white onion, aromatic garlic, fiery ginger, coconut oil, tomato purée, turmeric, canned sardines, cauliflower rice, and beaten egg. This filling dish makes a tasty low carb brunch, lunch, or dinner option.

What is Fried Rice?

Fried rice is typically prepared by pan-frying rice with an assortment of vegetables, eggs, and an additional form of protein such as fish, pork, or poultry. There are many variations on fried rice using different herbs, spices, and seasonings, making it an incredibly versatile dish. Fried rice is easily adaptable for low carb diets and can be made Keto-friendly by using cauliflower rice and including low carb vegetables. It can also be a quick, easy and flavorful meal to serve as a main or even as an accompanying side dish.

How Do I Make Cauliflower Rice?

Cauliflower rice is a versatile staple in any low carb diet and will easily take on the flavor of seasonings and sauces. Many grocery stores now carry ready-made cauliflower rice, which can be bought both fresh and frozen. If you are not able to access ready prepared cauliflower rice, it is very simple to make your own. Simply use a food processor or box grater to shred cauliflower florets into rice-sized grains, generating the quantity desired for the recipe.

  • Step 1

    Melt the coconut oil in a skillet over a low/medium heat. Finely dice the onion, thinly slice the garlic and grate the ginger. Add the onion, garlic and ginger to the skillet. Sweat gently for a few minutes until tender and fragrant.

    Roughly chop the sardines. Add the sardines to the skillet along with the tomato purée. Mix well to combine. Pan fry for a minute more.

    Add the cauliflower rice to the skillet along with the turmeric and tamari sauce. Stir well to combine. Pan fry for 2 minutes. If the pan feels dry, you can add a splash of water, stock, or a little more oil.

    While the rice is cooking, crack the eggs into a bowl. Add the black pepper. Beat the eggs together until smooth and well combined.

    Make a well in the center of the rice. Pour the beaten egg into the well. Allow the egg to settle for a moment and start cooking, then scramble the egg into the rice mixture. Cook the egg thoroughly until set.

    Divide the egg and rice mixture between two serving bowls. Roughly chop the scallions. Scatter the scallions over the cooked rice and serve hot.
