Keto Prosciutto and Mozzarella Pizza Chicken
This quick and easy chicken recipe is loaded with pizza inspired toppings including oozy mozzarella and salty prosciutto.
The chicken breasts are flattened and topped with pizza ingredients then baked until the mozzarella is melted and the prosciutto is crisp. Perfect served with a green salad or steamed veggies!

Ingredients
Chicken Breast, Skin Removed Before Cooking
2 medium - split
Mozzarella Cheese
2 tablespoon, grated
Prosciutto
2 slice
Tomato Paste
1 tablespoon
Basil, Fresh
1 tablespoon
Oregano, Dried
½ teaspoon
Olive Oil
½ tablespoon
Salt, Sea Salt
⅛ teaspoon
Black Pepper
⅛ teaspoon

Step 1
Preheat the oven to 400 degrees Fahrenheit.Step 2
Place the chicken breasts between two sheets of plastic wrap and flatten with a meat mallet or rolling pin to an even thickness - roughly 1/2 an inch.Step 3
Divide the tomato paste between the two chicken breasts, spreading evenly across the surface of each.Step 4
Sprinkle over the dried oregano and scatter over the grated mozzarella. Roughly tear the prosciutto and arrange over the chicken.Step 5
Season with salt and pepper and drizzle with the olive oil. Transfer to the oven for 20-22 minutes or until the chicken is completely cooked through, the cheese has melted and the ham has crisped.Step 6
Scatter with fresh basil to serve.

Where do you get 4 ounce chicken breasts? It says 2 servings is 8.4 ounces. That does not seem like 2 medium chicken breasts. I come up with about 200 calories per serving as per this recipe

I find 4oz chicken breasts all the time. I get four breasts in a 16 oz package, usually a brand we love called Smart Chicken.

This was a hit in our home tonight. I used tenders instead of the entire breast. I love the many recipes shared in this app and how much I’m learning to cook new foods that are healthy options for everyone in the home.

This was delicious 😋 I made it for my whole family and it was lovely. Reminds me of chicken parmesan. I also added a sprinkle of parmesan at the end.

Very tasty. Dang, I forgot to drizzle with olive oil. That might have made that other star. But I don’t eat chicken breasts so all I had here were thighs. They were juicy and delicious and maybe I didn’t need the oil. I usually season everything Tex-Mex style so this was a change for me. Wish there was an option to trade out or eliminate ingredients in these recipes.
