We have used almonds, cashews, walnuts, and peanuts; however, you can omit/replace any of these. You can also add hazelnuts, macadamia nuts, or pecans. If you prefer to limit the nuts and add seeds, your best options would be sunflower seeds and pumpkin seeds.
Can you use another herb for this recipe?
The rosemary adds another level of flavor to these nuts. You can replace it with fresh thyme or omit it altogether. The spices themselves are enough to make these nuts irresistible.
Should you use roasted, salted, or raw nuts?

Step 1
Preheat your oven to 300 F/ 150 C. Line a baking sheet with parchment paper and set it aside. To a large bowl, add the almonds, walnuts, cashew, and peanuts.Step 2
Add the olive oil and toss to coat. Add the cumin powder, cayenne pepper, erythritol, salt, and black pepper. De-stem the rosemary and add it in.Step 3
Mix to distribute the seasoning. Tip the nuts onto the lined baking sheet and spread them evenly. Transfer the baking sheet to the oven.Step 4
Bake for 20 minutes total, stirring after the first 10 minutes. Take the baking sheet out of the oven and let it cool completely. Add the cranberries and stir them in.Step 5
Transfer the nuts to a jar or an airtight container. Serve them on their own or as a part of a cheeseboard.
