  • Canned Coconut Milk

  • Erythritol Granulated

  • Vanilla extract

    Vanilla extract

  • Step 1

    Make sure to use full-fat coconut milk. Let the milk sit at room temperature for about 15 minutes before you start preparing the ice cream. Optionally, you can use the seeds from a vanilla bean instead of the extract.

    Add the coconut milk, erythritol, vanilla extract, and cinnamon to a bowl. Using a hand mixer, beat until fully combined. Taste and adjust the sweetener according to your taste.

    Transfer the mixture to a plastic container. Freeze for at least 4 hours (preferably overnight). Stir the mixture every thirty minutes for the first two hours. This will prevent the ice crystals from forming.

    I would avoid the erytritol, I use banana as a sweetener or just 5-6 dates mixed in the blender

        I worry about use of erythritol. There is an article published on the NIH (National Institutes of Health) website from March of this year (2023). March 14, 2023 Erythritol and Cardiovascular Events At a Glance Higher blood levels of the artificial sweetener erythritol were associated with increased risk of heart attack and stroke. The results highlight the need for further study of erythritol’s long-term risks for cardiovascular health. I'm not going to use erythritol until more research is done.

          I agree. Furthermore it is really bad for intestinal dysbiosis. It makes me sick. Cinnamon and vanilla are perfect. Add cocoa powder, it is a treat.

        Perfect made in my ice cream maker but I used 1 can of coconut milk and added some heavy whipping cream to make the 2 cups. Very good!
