Keto One-Bowl Mini Fudgy Brownies

I love how small these are because that means I can eat several without any guilt! I like to place the chocolate chips on top so they get melty and nicely decorate the tops of the mini brownies! They are quick to bake and are made in one bowl!

These were excellent! Easy & fast to make. Delicious & just the right size to enjoy with my tea or coffee. So good I felt like I was cheating.

These are very good . Very strong chocolate flavour! I used 6 packet of stevia &monk fruit for sweetener and added a sprinkle of pecans and chocolate chips. Had in mini muffin papers made 18 - 1 tsp each , cooked 6 min. On confection.

Can I use monkfruit as a substitute for the swerve and if so would the amount be the same?

Idk what happened but mine came out dry and not good. The only difference is I used 1/4 c swerve instead of 1/2 c. I pulled them out at 10 minutes.

Usually in baking, the amounts of sugar/ flour/ leavened/ salt, are strict and cause a big difference in the chemistry of you change it.

Yes they are easy to make and bake. I was a bit disappointed since i was really hoping for that true brownie taste. They are definitely not that, but a good little sweet treat ❤

These were delicious. I tried plain, with the chocolate chips & with 1 pecan half on top - plain & pecan were favorite. These are dark chocolate, but not bitter. I just ordered powdered erythritol so will try using that next time, because I'm not a fan of the granular crunch. Either way, recipe's a keeper! ☺

Does the recipe make 12 cupcakes or 18 mini cupcakes and if it’s the larger cupcake, what are the net carbs?

I'm new to Keto and allergic to almonds. I'm finding almond flour in a LOT of recipes. 😕 What can I replace it with?

Coconut flour can't replace almond flour 1 for 1. It is much drier. I can't remember the ratio but it just doesn't work

These are super yummy. I doubled the batch and put a bunch in the freezer. I also gave some to my daughter and son-in-law who are also doing keto. They are very tiny and didn’t look full like the photo though?

I just made these and used monk fruit sweetener instead of swerve. They are a little too sweet. Is the amount not the same with these sugar substitutes? I’m new to this game. Thank you!

Yes! Not all sugar substitutes can be replaced 1:1...They will still work with less monk fruit sweetener, so I would try them with half the amount of monk fruit next time and see what that gets you!

I made this last night but I don't have a cupcake pan so j just doubled the batch and baked it in a 8x8 pan and cut them in small squares! I even left out the chocolate chips. I've been craving brownies so bad and these taste amazing. I have probably eaten way to many already

I've been craving sweets really bad...I really shouldn't have made these 😂. I ate 6 last night. Whoops! My kids love them too. I couldn't find the sugar free chocolate chips so I put a dab of chunky pb on top. They're a little bitter but I don't think I'm used to no sugar yet lol.
