How to store these easy Keto mini dinner rolls?
These easy bread rolls are great to have on hand when you have unexpected guests coming for dinner. They can be made ahead of time to be stored in the refrigerator or in the freezer. To store them in the refrigerator, transfer the cooled dinner rolls to an airtight container lined with parchment paper and store them in the fridge for up to 1 week. Alternatively, store these Keto rolls in a zip-lock bag in the freezer for up to 6 months. Completely thaw the dinner rolls before reheating them. To reheat, microwave for 30 seconds or place them on a tray lined with parchment paper in a preheated oven until warm.
How to make these easy Keto mini dinner rolls?
These Keto dinner rolls are pretty straightforward to make. Start by melting the two types of cheese together in a heat-safe bowl, then mix them together to fully combine and form a smooth mixture and set aside to cool slightly. Then, add the almond flour, baking powder, and 1 egg. Mix to combine and continue kneading the dough with your hands. Cut the dough into 9 dough balls and shape each dough between the palms of your hands and arrange the round dough balls on a tray lined with parchment paper. Finally, brush the dinner rolls with egg wash and bake to golden perfection!
Can you customize this easy recipe?
Since this recipe is made with almond flour, it is best to avoid substituting almond flour with other types of flour, especially coconut flour. Coconut flour is known to be very absorbent and might result in a dry dough. However, it is possible to customize the flavor of these dinner rolls. To make garlic dinner rolls, brush the dinner rolls with garlic butter before baking them.

Step 1
Preheat the oven to 180C/350F, line a baking tray with parchment paper, and shred the mozzarella cheese. To a large microwave-safe bowl, add the cream cheese and mozzarella cheese. Microwave until the cheese is just melted, and mix the two kinds of cheese together using a spatula while still warm and set aside to cool slightly for a few minutes.Step 2
To the cheese mixture, add the almond flour, baking powder, and one egg. Mix well to combine using a spatula until a smooth dough is formed. Ensure that no lumps of almond flour are left behind. Feel free to use your hands to knead the dough to ensure a smooth dough is formed.Step 3
Cut the dough into 9 balls of dough and shape each ball between the palms of your hands to form uniform dough balls. Arrange the balls of dough on the lined baking tray. Whisk the other egg in a small bowl and use a pastry brush to brush the top surface of the dough with the egg.Step 4
Sprinkle the sesame seeds on top. Transfer the tray to the oven and bake for 20-25 minutes until golden on the outside.Step 5
Serve immediately with your favorite Keto curry or stew. These dinner rolls are best enjoyed warm since cooling may result in a dense texture of the rolls.

I know that I already submitted a rating, but I have to say that now that I have been using this recipe, it is a real gem. One of my favorite things to do is to make them and have them in my fridge. Then, when I need some more fat and protein, I cut a bun in half, toast both halves in my toaster oven, and add some Brie cheese (zero carb cheese). It is absolutely delicious!
