Keto Italian Breakfast Sandwich
This Keto Mediterranean breakfast sandwich is prepared with Italian sausage, formed into patties to create the ‘bread’ for our simple sandwich fillings. Once cooked, quick and easy scrambled eggs, sliced tomato, and peppery arugula are sandwiched between the pork patties creating the ultimate Keto breakfast stack. This makes a great weekend breakfast or brunch option.
Do I Have to Use Pork?
We have used Italian sausage meat to prepare our Keto breakfast sandwiches. If you would rather use an alternative meat you could substitute the pork for Keto compliant chicken or turkey sausages. You could also prepare your patties from scratch using your choice of ground meat and adding your preferred seasonings. Please be sure to adjust your macros to account for any changes made to the original recipe.
Serving Suggestions
These Keto breakfast sandwiches are perfect served on their own as a simple morning meal alongside your Keto coffee. Alternatively, these would make a great brunch option with a light Mediterranean inspired salad. You may also add your favorite Keto relish or sauce to the sandwich if desired.

Ingredients
Breakfast Sausage
4 link - each 0.7 ounce
Raw Egg
2 medium
Olive Oil
1 tablespoon
Tomato
½ medium - 2 3/5" diameter
Italian Seasoning
½ teaspoon
Arugula
¼ cup
Salt, Sea Salt
¼ teaspoon

Step 1
Squeeze the meat from the sausage casings and add to a mixing bowl. Add the Italian seasoning. Mix together well with your hands to combine. You may add additional seasonings or spices to taste, depending on the level of seasoning already in the sausage meat.Step 2
Heat the oil in a large skillet over a medium heat. Divide the sausage meat into four even portions and shape each portion into a patty. Place the patties in the heated skillet. Cook the patties through completely. They should be piping hot through with no pink remaining.Step 3
While the patties are cooking, crack the eggs into a bowl. Season the eggs with salt and pepper. Beat the eggs together well to combine.Step 4
Remove the cooked patties from the skillet and set aside. Pour the beaten egg into the skillet used to cook the pork and leave to settle for a moment and start cooking. Scramble the egg with a wooden spoon or spatula, cooking through to preference.Step 5
Slice the tomato into two even-sized discs. Divide the arugula between two of the cooked patties. Top each patty with a slice of tomato.Step 6
Divide the scrambled egg between the two patties, piling it on top of the tomato slices. Top each sandwich with a second patty to serve. Serve hot.
