Keto Grilled Lettuce with Anchovy Butter
This tender grilled lettuce is cooked until golden and lightly charred, then topped with a zesty anchovy and caper butter sauce.
This makes a great side to white fish, chicken or pork or could even be served as a lunch option on its own.

Ingredients
Anchovy Canned
2 anchovies
Little Gem Lettuce
1 x 1
Garlic
1 clove
Unsalted Butter
1 tablespoon
Lemon Peel Or Zest Raw
1 tsp
Capers
1 teaspoon
Lemon Juice
1 teaspoon
Olive Oil
1 tablespoon
Salt, Sea Salt
⅛ teaspoon
Black Pepper
⅛ teaspoon

Step 1
Wash the lettuce and slice in half lengthwise. Slice a thin layer from the tough base of the lettuce, ensuring all the leaves still remain intact.Step 2
Heat a griddle pan over a high heat. Brush the lettuce all over with the olive oil and lemon juice and season with salt and pepper.Step 3
Griddle for 2-3 minutes on both sides or until tender and slightly charred.Step 4
Whilst the lettuce is cooking, melt the butter in a skillet over a medium heat. Roughly chop the garlic and add to the butter along with the capers and lemon zest. Tear in the anchovies and stir to combine, cooking for 3-4 minutes until fragrant and the anchovies have melted.Step 5
Spoon the anchovy butter over the charred lettuce to serve.
