Our low carb snack is prepared with pumpkin seeds, chopped pecans, ground almonds, cocoa powder, almond butter, melted butter, and a little low carb sweetener. These treat sized bites are a great way to add a boost of Keto-friendly fats and sweetness to your day.
Can I Make These Dairy-Free?
These delicious Keto chocolate snacks are prepared with melted butter to add a boost of fats and to help the balls set in the fridge. If you are following a dairy-free diet, then you can easily swap the melted butter for melted coconut oil. Swap directly in the same quantities and use as directed. Please be sure to adjust your macros to account for any changes made to the original recipe.
Can I Use Different Nuts?
We have used ground almonds and chopped pecans for our low carb snack recipe. If desired, you may swap the pecans for an alternative Keto-friendly nut. Chopped macadamias or chopped hazelnuts would make a great substitution and would also complement the chocolate flavor.

Breakfast Butter Melted

Cocoa Powder Dry Unsweetened
2 tbsp
Erythritol
1.5 tbsp
Almond butter, unsalted
1 tbsp
Cinnamon
1 tsp
Pecans, raw
0.67 cup, chopped
Almonds, raw
0.5 cup, ground
Pumpkin seeds
0.25 cup

Step 1
Add the pumpkin seeds, 1/4 cup chopped pecans, the cocoa powder, ground almonds and erythritol to a food processor. Pulse together to combine, breaking down the seeds and nuts into small chunks. Transfer the crumbly nut mixture to a mixing bowl. You may add more or less sweetener according to personal taste.Step 2
Add the almond butter, melted butter and cinnamon to the bowl with the nut mixture. Mix everything together well to combine. The mixture should be dough-like and holding its shape.Step 3
Divide the nutty chocolate mixture into 12 even portions. Roll each portion into a ball with your hands. Arrange across a plate or small tray.Step 4
Add the remaining chopped pecans to a small bowl. Take each ball and roll it in the chopped pecans so that it is studded all over. Transfer the rolled balls to the fridge for 20-30 minutes to chill and set firm. Once set, store in an airtight container until ready to eat.
