Is Peanut Butter Keto?
Peanuts are a slightly higher carb choice when it comes to Keto. However, when used in moderation, they may be enjoyed as part of a healthy and balanced low carb diet. The key is finding a peanut butter that is free from additives and added sugars. The more natural the better! When used sparingly, peanut butter is a well-loved favorite that can be a great addition to your Keto kid-friendly recipes. Especially when combined with chocolate or low carb jam!
Can I Use an Alternative Nut Butter?
We have chosen to use the classic combination of peanut butter and chocolate for this Keto kid-friendly recipe. However, if you need to avoid, or would rather not use peanut butter, this may be substituted directly for a smooth almond butter. Simply follow the recipe as directed, using the almond butter in the same quantities. Please be sure to adjust your macros to account for any changes made to the original recipe.

Cocoa Powder, Unsweetened

Gelatin (jello) Powder, Plain

Step 1
Add the almond milk to a small saucepan. Add the peanut butter, coconut oil, cocoa powder and erythritol. Set over a low heat and whisk together until the peanut butter is melted and everything is smooth and well combined. Heat the mixture through until gently simmering. You may use your preferred low carb sweetener and adjust quantities according to personal taste.Step 2
Remove the saucepan from the heat and sprinkle the gelatin powder over the surface of the hot liquid. Whisk together immediately until smooth and well combined. It is crucial to whisk the gelatin quickly to avoid it clumping together.Step 3
Select appropriate molds for your gummies. We have used silicon chocolate truffle molds as they are ideal for gummies. You will need to have 45 individual molds. Divide the gummy mixture evenly between the individual molds. Each mold should hold about two teaspoons of the mixture.Step 4
Transfer the molds carefully to the fridge to set and firm. This will take up to two hours. Once set, carefully pop each gummy from the molds to release. Store in an airtight container in the fridge until ready to eat.

Taste really good!!! I made these but didn't have powdered gelatin and used a sheet instead. I don't think it was enough because it didn't turn into jelly. Also, I got 24 "gummies". I only had a mini muffin mold. I put them in the fridge, took them out after a few hours and were watery. Tried the frezer and the same thing. So, I decided to keep the whole mini muffin tray in the fridge and would spoon out the yumminess. Really good flavor. Will try again!
