Red Cabbage

Fennel Bulb
1 fennel bulb
Chicken Thigh With Skin
½ pound
Chicken Leg (drumstick And Thigh) With Skin
½ pound
Balsamic Vinegar
1 tbsp
Mustard
1 teaspoon
Olive Oil
2 tablespoon
Garlic
1 clove
Thyme Fresh
1 tablespoon

Step 1
Preheat the oven to 390 degrees Fahrenheit.Step 2
Mince the garlic clove and add to a small bowl with the olive oil, mustard and balsamic vinegar. Mix well to combine and reserve to one side.Step 3
Arrange the chicken pieces in an oven proof dish.Step 4
Dice the fennel and cabbage into even sized wedges and arrange around the chicken.Step 5
Sprinkle the thyme over the chicken and season generously with salt and pepper.Step 6
Pour the balsamic dressing over the top, and use your hands to ensure the chicken and vegetables are evenly coated.Step 7
Place in the center of the oven to bake for 35-40 minutes, turning halfway through, until the chicken is cooked through and the vegetables are caramelised and tender.

This is not Low FODMAP. Please do more research before you post these recipes. It’s hard enough to navigate both diets 😡

Hello, I am sorry for the distress caused and appreciate your frustration as I myself follow a low FODMAP diet. At the time of creating this meal plan, these items were low FODMAP approved, however the research is constantly changing and improving and therefore some of these ingredients obviously do not reflect the current recommendations. Thank you for bringing this to my attention and I will look into making relevant changes to this meal plan in line with new guidelines.
