Keto Hanukkah recipes can be easy to prepare and taste just like the real thing! A traditional latke is a type of potato pancake usually prepared to celebrate Hanukkah. This Keto-friendly version uses cauliflower instead of potatoes, but the result is just as fantastic. They are crispy on the outside with the most beautiful flavor - perfect for your celebratory meal. They are an excellent addition to your holiday table, but they can also be prepared all year round. This recipe will give you four pancakes, and the cooking time can vary a bit depending on the size of your frying pan.
How to serve Keto latkes?
Traditional latkes are served with sour cream or applesauce. You can prepare your own Keto-friendly applesauce that will pair perfectly with these Keto latkes.
Can I use a different type of cheese?
Gouda cheese makes an excellent substitute for cheddar. You can use the same amount of gouda. We don't recommend avoiding the cheese altogether, as your pancakes might fall apart while frying.

Cauliflower
9 oz
Cheddar cheese, natural
0.25 cup
Egg
2 large
Flaxmeal
1 tbsp, ground
Butter

Cut the cauliflower into small florets. Add the cauliflower to a food processor. Process until it resembles rice.Step 2
Season with salt and let it sit for 10 minutes. Spoon the cauliflower into a piece of muslin cloth or into a clean tea towel. Squeeze out as much liquid as you can.Step 3
Shred the cheddar cheese. Add the cauliflower, cheddar, eggs, flaxmeal, and pepper to a bowl. Mix until completely combined. Optionally, add some dried herbs or red pepper flakes to taste.Step 4
In a large frying pan, add the butter and heat over medium-high heat. When hot, add ¼ cup of the cauliflower mix and flatten out into small pancakes. Fry for 2-3 minutes on each side.Step 5
Serve immediately with some fresh arugula or sour cream. They will pair perfectly with Keto-friendly applesauce. These Keto latkes are best served hot.
