Keto Easy Air Fryer Butterflied Chicken Breasts

8 ratings

These easy Keto air fryer chicken breasts are butterflied then seasoned before being baked in the air fryer. Simple to prepare, with just a few ingredients, this Keto chicken recipe is a great option for weeknight dinners. Perfect served with cauliflower rice or steamed low carb vegetables.

Keto Air Fryer Chicken Breast Ingredients

These Keto chicken breasts are butterflied then tenderized before being simply seasoned. Once the chicken breasts have been flattened out they are brushed all over with olive oil, lemon juice and a generous sprinkle of salt. The chicken is then rubbed with crushed garlic before being air fried.

How to Cook Keto Chicken Breasts

In order to ensure the chicken remains tender and is evenly cooked, we have butterflied and tenderized the meat. This means the chicken cooks quicker and does not dry out. To aid the cooking process and to add additional flavor and fats, we have brushed our chicken with olive oil and a hint of lemon. Again this helps keep the meat succulent and flavorful.

  • Step 1

Taking a sharp knife, carefully slice along the edge of each chicken breast lengthwise so that you can open the fillet out like a book. Arrange the chicken breasts on a sheet of baking paper.
    Step 1
  • Step 2

Layer another sheet of baking paper on top of the chicken. Pound the meat with a tenderizer or rolling pin until it is of an even thickness all over. Drizzle the oil and lemon juice evenly over the chicken breasts. Sprinkle over the salt. Rub the liquids and salt into the chicken on both sides.
    Step 2
  • Step 3

Lightly oil the basket of your air fryer. Crush a large clove of garlic and rub evenly into the prepared chicken breasts. Place one of the chicken fillets in the air fryer basket and place in the air fryer. Set the temperature to 360 degrees and set a timer for 6 minutes.
    Step 3
  • Step 4

Turn the chicken over and return to the air fryer. Set the timer for a further 5 minutes. Check to see if the chicken is entirely cooked through and the juices run clear. Fry for a little longer if needed. Repeat with the remaining chicken breast. Serve with Keto salad or low carb vegetables.

Instead of the clove of garlic, I seasoned with a couple dashes of garlic powder and paprika. Chicken filets turned out juicy and delicious.

Great recipe, but I thought the spices were too bland so I BAMMED it up a bit to make it tastier. Turned out excellent. For those that would like to know, I added powdered onion, granulated garlic and cayenne pepper.
