Ingredients

  • Cauliflower, Raw

  • Garlic

    1 cup, grated

  • Bacon

    Bacon

    2 slice - 6" long

  • Chives

    Chives

    1 tablespoon, cut pieces

  • Unsalted Butter

    Unsalted Butter

    1 tablespoon

  • Salt, Sea Salt

    Salt, Sea Salt

    ¼ teaspoon

  • Black Pepper

    Black Pepper

    ⅛ teaspoon

  • Step 1

    Cut the cauliflower into florets and add to a large pan of water. Bring to a gentle boil then simmer until tender.

    Whilst the cauliflower is cooking, roughly chop the bacon and add to a pan over a medium heat. Fry the bacon until cooked and crisp.
  • Step 3

    Add the cauliflower to a food processor along with the butter, cream, half of the grated cheddar, garlic, salt and pepper. Blend until you have a smooth mash.

    Transfer the mash to an oven proof dish and sprinkle over the remaining cheddar.

    Heat a broiler to high and broil for 5 minutes or until the cheese is golden and bubbling. Scatter over the bacon and chives to serve.

        Frozen riced cauliflower works amazingly in this recipe. Also,alot of cauliflower recipes say to boil but as an alternative, try toasting in dry skillet over high heat until brown then season before adding other ingredients. You get so much added depth of flavor and the riced cauliflower almost melts
