Instead of wheat flour pasta noodles, you can use Keto-friendly shirataki noodles. The shirataki noodles used in this recipe come in a fun macaroni shape, but any style of shirataki noodles will do. Eat the Keto pasta salad warm or chilled - both are great. Kids, adults, Keto, or non-Keto eaters will all enjoy this trendy, delicious, flavorful dish.
Where Do I Find Shirataki Noodles?
Shirataki noodles are made with a special type of yam flour, which has little to no carbs in it. Shirataki noodles have to be packaged in water and kept cold, so you’ll most likely find them in the refrigeration aisle. If your grocery store has a vegetarian or special diet section, look there. If all else fails, you can purchase Keto noodles online to be shipped to you.

Shirataki noodles may also be labeled as “konjac noodles” or “miracle noodles”, depending on what brands are available to you. Check both the refrigerated section and any special diet sections you may see at your grocery store. Step 1
Preheat the oven to 375 degrees. Unwrap a block of feta cheese and place it in the center of a small glass baking dish, leaving the cheese whole. Arrange whole grape tomatoes between the feta cheese and edges of the glass baking dish, making sure to fill any empty glass at the bottom. Next, cut the number of garlic cloves you need from a head of garlic by removing the top of the bulb and slicing the cloves so they remain attached to each other at the bottom. You can remove any loose paper hanging off the garlic cloves, but leave the cloves in their natural wrapping. Wedge the garlic clove into your grape tomatoes.Step 2
Sprinkle salt, pepper, oregano, thyme, and fresh lemon zest across the dish. Drizzle extra virgin olive oil over all the ingredients, making sure to coat the exposed garlic cloves and the tomatoes thoroughly. Cover the dish with aluminum foil and bake in your oven for 40-45 minutes. When done, the feta will still be in a whole piece but will be extremely soft. The tomatoes will have burst and released their liquids, and the garlic will be roasted and soft. Let the dish cool for 5 minutes after baking.Step 3
When the feta has cooled off a little, remove the garlic cloves from the dish using a pair of tongs. Use the tongs to squeeze the warm garlic cloves from their skin (they should slide out easily) and into the dish. Use a pair of forks to break apart the tomatoes, feta cheese, and garlic cloves and mix everything together. Mix thoroughly until you have a warm, creamy, tomato and feta cheese sauce. Drain a bag of shirataki noodles, and prepare them as the packaging directs you to. Most shirataki noodles need to be boiled for 2-3 minutes before being drained again and set aside to cool.Step 4
Add your prepared shirataki noodles to the baked feta sauce (you may need to combine the ingredients together in a larger bowl or dish). Fold the ingredients together before arranging in a serving dish. You may enjoy the pasta salad warm, but it also tastes good as cold leftovers. Chill the pasta salad completely in your refrigerator, and add it as a high-fat side dish to your meal prep containers. Keep the baked feta pasta salad stored in an airtight container in your refrigerator for up to 1 week.
