Keto 3-Ingredient Microwave Chocolate Souffle
Here is a simple dessert that takes only 5 minutes to make, from start to finish! This Keto chocolate soufflé is rich, and moist and is the perfect treat for when you are craving something sweet but don’t have much time on hand. It requires only 3 ingredients, just as the name suggests.
What to serve with these Keto chocolate soufflé?
Truth is, there is no wrong way to serve soufflé! This Keto chocolate soufflé can be served with Keto ice cream, specifically vanilla-flavored Keto ice cream since this Keto soufflé is decadent and rich in flavor. It can also be served with fresh berries such as raspberries and strawberries. If you fancy a drizzle, runny peanut butter or Keto-friendly caramel sauce are good options that pair well with chocolate flavor.
How to store this Keto chocolate soufflé?
Once the soufflé is completely cooled, cover the ramekin tightly with plastic wrap. Transfer to the refrigerator to store for up to 3 days. The soufflé with solidify in the middle while in the fridge, therefore, ensure to reheat it before eating. To reheat this Keto chocolate soufflé, remove the plastic wrap and warm it in a preheated oven for about 5 minutes at 350F/180C. You can also reheat this soufflé in the microwave too. Remove the plastic wrap, place the ramekin on a plate, and cover it with a damp paper towel. Microwave for about 20-30 seconds and enjoy right away.
Can you make this Keto chocolate soufflé in a mug instead of a ramekin?
Yes, you can bake this Keto soufflé in a mug. Considering that mug cakes usually bake in the microwave, using an oven for this soufflé is the more reasonable idea. Because baking in a mug in the microwave could result in uneven cooking of the soufflé and difficulty in getting a melty bottom. Ensure that the mug you are using is oven-safe. A tip to get a melty bottom center is to add a few dark chocolate chips or dark chocolate squares in the center of the soufflé before baking.

Step 1
In a 4 oz ramekin, add the egg, cocoa powder, and sweetener. Stir to incorporate all the ingredients together fully. The mixture should be smooth with no lumps.Step 2
Transfer the ramekin to the microwave and cook for 45 seconds. The soufflé should rise slightly and not be fully cooked through the bottom. Slightly undercooking will result in a thin layer of sauce at the bottom of the ramekin, almost like hot fudge. Serve immediately.

It tastes good and has satisfied my choc craving. Like others, I need to adjust down the temp and or timing of my microwave because the 45 sec cooked the cake too much. Mine was totally cooked with no sauce and the texture was slightly tough. Regardless, I added a squirt of whipped cream and 1 tblsp cacao nibs and I am smiling!

Quick and easy to make and satisfies the sweet craving

I add 1 tsp of almond flour and 1/8 tsp of baking soda and it gets a better "cake" consistency. But all in all love this quick sugar fix. If you want some "syrup" add a small amount of shaved dark sugar free chocolate, but now its getting more complicated LOL

For what it is, I thought it tasted pretty good. Nailed my sweet craving. I should have shaved off about 10 seconds for my microwave but it still it tasted pretty good. I also used 1 tbsp of whole earth sweetener. I was wondering if anyone used confection sugar?

Are you kidding me! This was the best chocolate pudding/cake/soufflé I have ever had! I’m telling all my friends! I am blown away!

I tried this twice. They both popped really well. The first time I overcooked it, the second time it still had the sauce layer, but I think my microwave may be too powerful. Each time it shrank up and pulled away from the sides. I’m willing to try this again if anyone has tips for getting that perfectly filled ramekin in the demo pic 😊

I beat my egg in my blender to make sure it was well mixed. Maybe that help to get it taller.

I have had the same problem but it still tastes good so I’ll keep trying. Maybe I’ll try to decrease the power of the microwave
