Keto Coronation Chicken

This keto friendly take on a classic coronation chicken is rich with aromatic flavors. Traditionally coronation chicken includes dried fruits for sweetness and texture, these have been swapped for a little sundried tomato to retain a sweetness in the recipe.

This simple chicken dish is perfect served in lettuce wraps for lunch or on top of a green salad – or even on its own! It is also a great way to use up any leftover roasted chicken.

  • Step 1

    Add the crème fraiche, mayonnaise, lemon juice, curry powder and salt to a mixing bowl. Stir well to combine.

    Finely slice the scallion and sundried tomatoes and add to the bowl. Tear in the chicken and add the flaked almonds.

    Mix everything together until completely combined. Scatter with fresh cilantro to serve.

    This is fantastic. The curry flavor, the crunch of the almonds, the freshness of the cilantro - definitely making it again. A great way to repurpose leftover chicken, and it was kid approved too!

      I enjoyed the curry in this. Made it with some rotisserie chicken I had and ate it on some romaine leaves. Definitely will make again.

            Love this! Used canned chicken instead of rotisserie chicken and it turned out yummy! I increased the other ingredients by 3X for a 12 oz can.
