Step 1
Add the flaked almonds to a dry skillet. Turn the heat to low/ medium and toast gently for 3-4 minutes, turning often until lightly golden. Be sure to keep an eye on these as they can burn quickly. Set aside.Step 2
Dice the broccoli into bite sized chunks. Add the broccoli pieces to a saucepan of water. Bring up to a boil, then simmer for 4-5 minutes until fork tender. Drain completely and set aside to steam dry.Step 3
Whilst the broccoli steam drys, thinly slice the onion and garlic. Melt the butter in a skillet over a low/medium heat. Add the onion and garlic and sweat gently until tender.Step 4
Add the ground coriander, ginger, curry powder, and turmeric. Stir well to combine. Cook gently for a minute to warm the spices.Step 5
Add the broccoli to the skillet and season with salt and pepper. Stir well, coating the broccoli in the butter and spices. Stir fry over a medium/high heat for 4-5 minutes or until lightly browned and starting to crisp a little at the edges. You may add a little water if the pan starts to get too dry.Step 6
Finely chop the cilantro. Sprinkle the cilantro and toasted almonds over the broccoli. Stir well to combine and serve hot.
