Egg Free Keto Microwave Bread
We have created a lovely egg-free Keto microwave bread for those with egg sensitivities. Our microwave bread is soft, light, fluffy, and completely gluten-free. The best part is that all the ingredients can be mixed directly into a coffee mug and “baked” in the microwave in a minute. Doing so makes creating this side dish a snap. If you have higher calorie needs, you can easily double the amount of coconut oil and still create a nice bread.
How do I choose the right coconut milk for this recipe?
We used full-fat canned organic coconut milk. You can also use conventional coconut milk, but it needs to be the canned variety. Carton-type coconut milk could work but has many additives and less beneficial fat than canned coconut milk.
Do I have to use coconut in this recipe?
While this recipe is nut-free, you could swap the coconut flour for 6 tablespoons of almond flour. You can also swap the full-fat coconut milk for almond milk. The coconut oil can be swapped with olive oil, avocado oil, or butter (if dairy is not a concern for you).
What are other variations I can make?
If you want to mix things up a bit, you can mix in chia seeds, flax seeds, or pumpkin seeds for added texture or crunch.

Step 1
Combine the coconut flour, coconut milk, coconut oil, water, baking soda, psyllium husk powder, and sea salt in a tall (12 oz) microwave-safe coffee mug. Stir well until everything is combined evenly. The dough will be thick.Step 2
Place the mug into the microwave and cook on high for 1 ½ minute. The bread will puff considerably and then settle back down. Allow cooling slightly before serving directly from the mug.
