Keto American Cheeseburger Skillet

32 ratings

All the classic components are here: Charred beef, fresh lettuce and tomato, and a layer of gooey yellow cheese. Of course, you could substitute the American cheese with cheddar. Some fluffy cauliflower rice bulks this filling meal up. Feel free to include other burger ingredients that you enjoy like pickle, red onion, or mustard!

Recipe Steps

  • Step 1

Combine the ground beef and olive oil in a large skillet over high heat. Break up the beef, leaving an assortment of crumbly and chunky pieces to mimic a chopped up burger patty. Stir in the first amounts of salt and pepper; garlic; and onion powder. Cook until the beef is browned and slightly charred.
    Step 1
  • Step 2

Transfer the cooked beef to a bowl set aside. Leave any juices in the skillet and return it to a medium heat. Toss in the butter and cauliflower rice.
    Step 2
  • Step 3

Add the second amounts of salt and pepper to the rice. Turn the heat to a medium-high and cook until the rice turns slightly charred.
    Step 3
  • Step 4

Stir the cooked beef back into the skillet and gently fold the ingredients until the beef comes back to temperature.
    Step 4
  • Step 5

Turn the heat back down to a low setting and stir in the lettuce and tomatoes (sliced in half). Cook for about 2 minutes - just long enough the heat the veggies but maintain their crispness.
    Step 5
  • Step 6

Keep the heat on low and lay 4 slices of American cheese over the skillet. Place a lid over the skillet to help melt the cheese - about 3-4 minutes. Once melted, set the skillet aside to cool temporarily.
    Step 6
  • Step 7

In a small bowl, stir together the mayo and ketchup. Serve this special sauce on the side or spoon it directly onto the skillet.

Made this for the fam tonight. Added ketchup, mustard, and mayo to the meat just before adding the Cheddar. I let the cheese melt and mixed everything together. Served it with cauliflower mash and it was a hit! Sliced some pickles and added on top when serving. I didn't add lettuce or tomato. Delish!

I’ve done a slightly different version and added mustard to the mayo and ketchup then mixed this into the mince before adding popping the cheese on and grilling!!

I left out the lettuce and opted to chop fresh lettuce after reheating for each days meal as I prepped a week of food at one time. I also diced up dill pickles and cooked them with the meat. Very yummy

Loved it! I eat alone and saved 3 of the 4 servings for later in the week. I did substitute a secret sauce for the mayo/catsup mix and after reheating my left over serving, added chopped lettuce to the top. my secret sauce was G. Hughes secret sauce for burgers.(I have no connection to G. Hughes, other than being a customer.) the spices in your recipe were spot on for me.!

My entire family loved this recipe. My 11 year old claims to hate tomato and lettuce, yet he ate it all. I added pickles.

I still can’t figure out how change ingredients when logging, or should I just add it separately in my daily logs?

You can, but cabbage is higher in carbs than lettuce. If making this recipe, make sure to include the cabbage you use separately in your food log so you have calculated the macros correctly.

Not a fan of tomatoes, however, I didn't have relish so I took some pickles from the jar and chopped those up and then added some mustard. It was amazing!!! Another one of my favorites.

I would highly recommend draining the oil from the meat - I’ve had an upset stomach all night. Otherwise it was good.

I loved it. I added onions to the hamburger and also used double the onion powder. Since I was planning for half of it to be leftovers, I only added cheese to the half we were eating and topped our servings on the plate with the lettuce, tomatoes, and mayo-ketchup mixture, instead of mixing in the lettuce and tomatoes. The mayo mixture was like a salad dressing. I gobbled it down so fast I forgot to add sugar free pickle relish. I will try that with my leftovers tomorrow. I may make a double batch next time.
