Cilantro
2 tablespoon
Hot Chili Pepper, Dried, With Seeds
1 teaspoon
Olive Oil
1 tablespoon
Salt, Sea Salt
¼ teaspoon
Black Pepper
⅛ teaspoon

Step 1
Thinly slice the scallions. Heat the oil in a skillet over a low/medium heat and add the scallion and chili flakes. Cook gently for a minute or so until tender.Step 2
Add the eggs to a bowl with the cilantro leaves, salt and pepper. Beat together well to combine.Step 3
Add the beaten eggs to the pan and allow to settle for a moment then scramble with a wooden spoon, cooking to preference.

Just to add to the steps above: only add the hard, white ends of the scallions initially. Add the green parts right at the end or as a garnish. If you add the greens at the beginning they’ll be destroyed and won’t add the desired flavor.
