Ingredients
Scallions
2 small - 3" long
Peanut Butter, Unsalted
1 tablespoon
Cilantro
1 tablespoon
Tamari Sauce
1 teaspoon
Lime Juice, Fresh
1 teaspoon
Cucumber
½ medium
Red Cabbage
½ cup
Peanut Butter, Unsalted
1 tablespoon

Step 1
Peel the cucumber skin and discard. Peel the cucumber flesh into 15 wide strips.Step 2
Add the peanut butter, tamari and lime juice to a small bowl and mix together until well combined. Finely chop the cabbage, scallions, peanuts and cilantro.Step 3
Dot each cucumber strip with generous amounts of peanut butter.Step 4
Sprinkle the diced cabbage over one half of each cucumber strip and repeat with the remaining ingredients so that each cucumber strip is half loaded with filling. Carefully roll the uncovered half tightly around the filling creating a tube around the ingredients. Serve.
