    Start by slicing a whole medium or large avocado into 8 thick pieces. The weight listed in the ingredients is the avocado weight after the pit as been removed. Also, choose an avocado that is a little under-ripe. You can also store your avocado in a refrigerator the night before, since the fruit is easier to handle when it is cold.

    If your bacon strips are packaged as 12-inch long pieces, slice 4 strips into 8, 6-inch slices. Wrap a single slice of bacon around each piece of avocado, trying to keep both ends of the bacon on the same side.

    In a pan over medium heat, place as many wrapped avocado slices as you can with the ends of the bacon strips down. This helps keep the bacon in place as it cooks and shrinks a little.

    Cook all avocado slices for 1-2 minutes per side and until the bacon is crispy, using a spatula to flip them. You can use a paper towel to soak up any excess grease you do not want after they have cooled.

        How do these keep after cooking? Can you make a batch ahead and store in the fridge?

          If your avocado is mostly covered with the bacon, you can store them in an airtight container in the fridge for 24-48 hours. The avocado will inevitably brown by 2 days. Hope this helps!
