  • Step 1

    Start by mincing the garlic, grating the fresh ginger, chopping the green onion, and peeling/chopping the shrimp. Have these ingredients set aside for later.

    Heat the first amount of olive oil in the pan over medium heat. Toss the cauliflower rice in the oil with the rice vinegar and salt. Cook the rice until it gets lightly golden and heated through.

    Toss the ingredients from step 1 into the pan, as well as the coleslaw mix. Stir in the second amount of olive oil, and cook until the shrimp become a little golden brown and all the ingredients are heated through, soft, and fragrant - about 4-5 minutes.

    Finally, turn the stove heat down to low and whisk an egg together in a bowl. Pour the egg into your pan. Let the egg cook for 10 seconds, then stir slightly to scramble the egg. Repeat this process until the egg is cooked through and in scrambled pieces.

    Enjoy hot! Top your egg roll in a bowl with sesame seeds, soy sauce, chili sauce, or another topping that you enjoy.

        I made with ground pork & we loved it! I also sprinkled wonton strips on top for crunch!! Yummy! Will be adding this to our weekly meals!! ❤️❤️

          I used ground pork rather than shrimp. It tasted very much like an eggroll without the greasy crunchiness. This is in regular rotation at my house.

          I didn’t use shrimp but I did use ground chicken and it was delicious! I’m gluten free so I used aminos in place of soy sauce. I topped it with a sprinkle of Thai red chili flakes 🔥🔥🔥

                A family favorite here, but I add ground pork to it as well for more protein! Pork and shrimp together is amazing!

                  We liked it! Next time will try little salad shrimp to get the prep time down. Added fresh mushrooms sliced very thin. Added shrimp a minute before the egg. Doubled the recipe and hope I have some left for lunch tomorrow. 😉👍 Thanks for a good recipe!

                      Delicious!!! I used avocado oil in place of olive oil, a little sesame oil, added crab meat and extra shrimp. We ate it with sugar free yum yum sauce.

                        This recipe results in a 2:1 fat to protein ratio. If you want more protein, try adding more shrimp. If you want fewer fat grams/calories, simply cook the garlic and ginger in the 1/2 of the oil, then add and brown the cauliflower rice directly without any more oil. Covering the rice and slaw mixture will ensure they steam through and stay crispy in only 3 minutes. Consider adding the shrimp last, so they don't get rubbery and lose flavor .

                            after you steam your cauli rice in the microwave wrap it in a towel and squeeze the excess water out of it.. Cauli rice holds a lot of moisture... always drain the moisture off... unless youre cooking it in a stock for soups etc

                            If you have a price chopper, or walmart they both carry store brands of cauliflower rice in frozen section. It just takes 2-3 mins to cook when your stirfrying.

                            I buy mine at Aldi's it is in a pouch sitting on the shelf ready to use and its delicious!! refrigerate after opening if you don't use it all!!

                            I pretty much tripled the amount of shrimp because 4 shrimp per meal is not enough for me. But it is SO good! I also added chopped broccoli and cauliflower because I needed to use it up. I put it in at the same time as the shrimp and it was a great addition. This will be a regular on my menu.
