Keto Bacon Cheddar Egg Clouds
These fluffy clouds are all egg! Each cloud is whipped up with crispy bacon and a sprinkle of cheddar cheese, and they cradle a soft-baked egg yolk. Enjoy alongside some keto toast with avocado or another favorite Carb Manager breakfast recipe!

Bacon
2 slice - 6" long
Raw Egg
2 large
Salt
⅛ teaspoon
Black Pepper
⅛ teaspoon
Cheddar Cheese
⅛ cup, shredded

Step 1
Preheat an oven to 325 degrees and line a small baking tray with parchment paper - set this aside. Cook to pieces of bacon over a stovetop to a crisp. Allow the bacon to cool, then chop it into bacon bits.Step 2
While your bacon is cooling, separate your eggs. Set the yolks aside, but keep them intact. Set the egg whites in a stand mixer and whip them to stiff peaks.Step 3
Use a spatula to fold in the salt, pepper, cheddar cheese, and bacon bits into the egg whites, being careful not to completely deflate the eggs.Step 4
Divide the mixture into 2 portions (or more if you are making more servings), and set them on the baking tray. Use your spatula or a spoon to create pockets in the center of each egg cloud.Step 5
Bake the egg clouds for 10 minutes. Then, set the reserved egg yolks in the center of each egg cloud and bake for an additional 10 minutes for over-medium yolks. Garnish with freshly chopped chives and enjoy!

Any alternatives for someone without a mixer? I have a whisk and that's it!

This may sound crazy, but when I only have a wire whisk available, I rub the handle back and forth rapidly between my hands to create a mixer motion. It does whip more quickly than a normal beating motion.

Loved these. A little time consuming to whip the egg whites but worth the time. We keep cooked bacon available for recipes which helped cut the prep time.

I need to know, why is it worth the time? It basically tastes the same if you'd just scrambled everything up

Ooops...forgot to bake the egg white for 10 mins first before adding the yolk in the middle but it still tasted yummy.

Definitely a weekend breakfast dish as whipping egg whites is a bit time consuming. Light and satisfyingly good!
