Juicy chicken thighs are heavily seasoned before cooked to a golden char. Once done, they’re sliced and arranged over a bed of cauliflower rice just dripping in a rich, buttery sauce. Fresh spinach is added to bulk up the bedding and to add a brighter taste to your palate.

One serving is approximately ½ cup of rice/spinach with 3 ½ oz cooked chicken.

  • Step 1

    Lay out your chicken thighs, and cut them into manageably large pieces. If any are particularly thick, you can butterfly them. Sprinkle the first amount of salt, the pepper, onion powder, paprika, and lemon pepper over the chicken.

    Heat the olive oil in a large skillet over medium heat. Place the chicken in the skillet and place a lid over it. Cook the chicken for 4-5 minutes per side, until the chicken is golden brown on all sides. When you flip the chicken over, squeeze the lemon juice over the pieces. Set the cooked chicken aside to rest when done.

    Return your empty skillet back to your stove on low heat. Toss the chicken broth and cauliflower rice into the skillet. Stir in the second amount of salt and garlic powder. Cook with the lid on until the cauliflower has absorbed the broth.

    Melt the butter into the rice. Once melted, chop and stir in the spinach. Cook over low heat, stirring, until the butter is absorbed and the spinach is wilted.

    Take the skillet off the stove. Slice your chicken into strips or chopped pieces, and arrange the pieces over the buttery spinach and rice. Serve hot!

    I found this recipe delicious and easy. As for the chicken itself, I think this is a great way to cook chicken thighs! I'll be using that portion of the recipe for other chicken dishes too!

      Looks great. Can’t wait to try it. I noticed a lot of the chicken recipes don’t specify whether to use boneless or bone-in?

        This dish was delicious! The cauliflower rice does indeed taste like real risotto rice… the touch of fresh squeezed lemon put the “chefs touch” on this delightful dish. I love that it was lower in calories as even in Low carb diets one must monitor calories as well as the other macros, another Winner Carb Master, I’ll make this again as others have stated as well…..

          So good. The buttery cauliflower and spinach was like a creamy rissoto. I may add pine nuts at the end next time. Since I kept the chicken fat in the pan, I used just a 1/4 cup of broth. I think 1/2 would have been too much.

            I only had half the amount of spinach, so I used mushrooms for the other. I also sautéed the mushrooms and spinach in the allowed amount of butter then added everything together. Amazing !

                    this was absolutely wonderful so good. i didnt have lemon pepper seasoning tho so i used my own homemade version of season all instead. rlly good

                        doesn't say rather to remove oil from chicken or not Actually came out great but took a long time for rice to absorb broth plus oil
