Black Olives

⅓ medium - head - 5" to 6" diameter
Salt, Sea Salt

Italian Seasoning

Step 1
Slice the cauliflower into two even steaks, each about a half inch thick. Add to a pan of boiling water and simmer until the steaks are tender. Remove from the pan and pat dry.Step 2
Heat the olive oil in a skillet over a low/medium heat. Finely slice the mushrooms and crush the garlic. Add to the pan and cook gently for a minute or two until just tender.Step 3
Preheat the oven to 400 degrees Fahrenheit.Step 4
Divide the tomato sauce evenly between the two cauliflower steaks and sprinkle over the Italian seasoning. Divide the garlic mushrooms between the two steaks.Step 5
Finely slice the olives and arrange over the mushrooms.Step 6
Transfer the cauliflower steaks to a shallow oven tray and bake for 8-10 minutes until the cauliflower starts to turn golden and is hot through.
