Preheat an oven to 350 degrees. Line a sheet tray with parchment paper and set this aside. Prep the broccoli by chopping it into very fine pieces. It’s okay to leave some pieces a little chunky, but the finer the pieces the better.Step 2
In a bowl, combine the broccoli and all remaining ingredients into a consistent mixture.Step 3
Create 10 even portions of the mixture. Flatten each mixture into ¾-inch to 1-inch thick disks on the prepared sheet tray.Step 4
Baked the tray of broccoli cheddar bite for 30 minutes. Enjoy hot or cold!

Perhaps you flattened the bites too thin before baking? You could make them a little thicker next time. The only other solution I can think of here is make sure you are using parchment paper and not wax paper. Parchment paper is normally a non-stick surface, but you could use a light layer of pan spray to help out. Hope this helps!

I also used riced cauliflower to add some extra flavor

Could this be made with cream cheese instead of ricotta?

Yes I also used a little Parmesan and almond flour
