A Keto pizza recipe that is naturally gluten-free, dairy-free, and vegan! Tell me more I hear you say! These Keto pizza bites are made from a cauliflower base and combined with almond flour, hulled hemp seeds, and some basic store-cupboard herbs and spices. Shaped into little balls, they are great for the whole family, served alongside a bowl of marinara sauce to dunk them into!

Can I make any ingredient substitutions?

If you don’t have hulled hemp seeds (without the shell), you can simply replace them with more almond flour or ground flaxseeds.

  • Step 1

    Preheat the oven to 350° F/ 180° C and line a baking tray with baking paper. Remove any cauliflower leaves. Use a box grater to shred the cauliflower. Place the cauliflower rice in a large heat-proof bowl and drizzle 2 tablespoons of water over it. Microwave on high for 4 minutes. Leave to cool for 10 minutes so it’s easier to handle.

    Transfer the cauliflower into a muslin cloth or thin linen kitchen towel. Gather the corners of the towel and twist to form a bundle. Hold the bundle over the sink and squeeze tightly to expel as much water as possible. Quite a lot of water will be released, but keep squeezing until you can't get any more water out.

    Make the flax egg by adding 1 tablespoon ground flaxseed to a small bowl with 2.5 tablespoons of water, mix and set aside for 5 minutes to thicken. Add the cauliflower to a large bowl, along with ½ cup vegan shredded mozzarella, ground almonds, hulled hemp seeds, flax egg, garlic powder, onion powder, oregano, thyme, chili flakes (optional), sea salt, and black pepper to taste. Use your hands to gather the ingredients and form a ball of pizza dough.

    Use a tablespoon as a guide to portion the dough. Roll a chunk between your palms into 12-14 balls. Place on the baking tray and top with the remaining vegan cheese.

    Bake in the center of the oven for 12-15 minutes or until the 'cheese' has melted and golden. Whether you choose to make your own marinara sauce or use store-bought, heat through and serve alongside the vegan cauliflower pizza bites with fresh basil and a side salad.
