Keto Granola Protein Bars
It is 100% possible to do a plant-based Keto diet! These protein bars are made entirely of nuts, seeds, and plant-derived ingredients. Also included are some chocolate chips (no granola bar is complete without them), but you can omit this ingredient without changing the recipe. These granola bars are perfect because they have different-sized pieces and a variety of crunchy textures. Enjoy the buttery walnuts and almonds, the salty pepitas, and crunchy, earthy hemp seeds. Eat this plant-based Keto snack in the morning as your breakfast or as part of a lunch. They’re also great for eating before or after a workout.
Optional substitutions and omissions
To make this a more plant-based Keto snack, you can omit the maple extract. However, if you don’t mind it, you could also use vanilla extract instead. If you want to substitute the honey, you can use light agave syrup. However, you could also use a Keto sweetener to substitute the honey.
What are pepitas?
Pepitas are just another name for pumpkin seeds. Pepitas will be shelled and come either salted or unsalted. Using salted pepitas in this recipe will help add flavor to the protein bars. Pepitas also have a variety of trace minerals and vitamins, so they’re very healthy for you.
Hemp seed nutrition
If you’ve never had them before, hemp seeds are extremely nutritious. An ounce of hemp seeds has about 14 grams of fat, 9 grams of protein, and less than 3 grams of carbohydrates. Hemp seeds also have magnesium, calcium, and iron in them. Add them to smoothies, sprinkle on salads, or mix them into this granola protein bar recipe!

Step 1
Chop raw almonds or use slivered almonds, and add them to a small mixing bowl. Add chopped walnuts, hemp seeds, and salted pepitas (pumpkin seeds) to the bowl. Pour the ingredients into a wide skillet on your stove and toast them at medium heat.Step 2
Once the nuts and seeds are toasted, add them to a larger mixing bowl. Melt coconut oil in your microwave, then pour it over the ingredients in the bowl. Use a spatula to fold the ingredients over, getting everything coated in coconut oil.Step 3
While the granola is still warm, add the almond butter, honey, maple extract, and liquid stevia drops to the bowl. Fold the ingredients over again until the butter and honey melt and coat the nuts and seeds. Leave the granola aside to cool for 10 minutes.Step 4
After the granola cools, fold the chocolate chips into the granola (120 pieces is approximately 1 ounce). Line a 7x5 glass or ceramic dish with parchment paper, and pour the granola into the dish. Use your spatula to gently press the granola into all four corners.Step 5
Freeze the granola for just 30 minutes. Then, remove the parchment paper from the dish to lift out the firm granola. Cut the granola into slices for serving. Keep chilled.
