In a pinch for lunch? Make these spicy salmon bowls ahead of time, and you can easily meal prep your lunches! The longer your salmon can marinate in the chili-soy sauce, the more flavor will develop! If you’re too sensitive to spicy food, you can remove the sriracha from the spicy mayo drizzle. Otherwise, enjoy this meal hot or cold!

  • Step 1

    Mix prepared, hot cauliflower rice in a bowl with the salt and pepper. In a separate bowl, combine the lox, chili sauce, soy sauce, and ginger. You can use a spoon to mix the ingredients together and break up the lox, if necessary.

    Divide the cauliflower rice between two bowls. Arrange the saucy lox over the rice evenly.

    Whisk together the mayo and sriracha, and drizzle the spicy mayo over everything. Top off both bowls with freshly chopped cilantro as garnish, and enjoy!

    Didn’t have all ingredients so I marinaded the salmon in soya sauce, olive oil, ginger, 1 chopped garlic clove, 1 small chopped red chili, 1 teaspoon sweet paprika, and the rind and juice of half a lemon. Left out the mayonnaise and fried the cauliflower rice with a few scallions, 1 garlic clove, and a few chopped up green beans plus salt & pepper in 1 tablespoon of coconut oil. Fried the salmon mixture with the marinade in a separate pan and then served it on top of the fried rice, scattered with Cilantro- absolutely gorgeous!

      Going to make this a staple recipe. It’s delicious. I’m not even a fan of lox but the marinade is delicious

            This recipe is delicious! I used smoked salmon and it was perfect. I made the cauliflower rice as fried rice with onion and broccoli. I also topped it with scallions. Delicious!!

              I used smoked salmon and added a splash of rice wine vinegar to the cauliflower rice, a teaspoon of black sesame seeds, and a 1/4 tsp of minced garlic. I will definitely make this recipe again!

                Delicious! Definitely one recipe to repeat & keep! I did use cooked salmon because I have this thing about raw food lol but it was still good. The flavor &the spiciness are a great combo👌👍

                I love this recipe! It is quick to prep ahead of time and full of flavor - perfect for my busy schedule. I add in cooked spinach and 2 soft boiled eggs so it fits my macros a little more, and also leave out the Sambal Oelek because I haven’t been able to find it in my grocery store. Thanks for sharing this recipe!

                Where do you buy the salmon? Is it called lox in the store? Is this essentially raw?

                  I used previously frozen salmon from Costco it was already defrosted. My friend in Japan said when they make sushi they use frozen salmon, she mentioned it is safe to eat that way.

                  Can you use regular salmon if you can’t find lox or smoked salmon

                  Lox or smoked salmon are both viable options here. This type of salmon is typically sliced thin and comes in a vacuum sealed package, much like bacon. Lox and smoked salmon is not cooked with heat, but the protein is cooked with salt, so it is safe to eat directly from the package!

                  I haven’t been able to find lox, but smoked salmon is similar and I use that. I find the smoked salmon in the section of the grocery store where the imitation crab meat is kept. The type that is available in my grocery store is in a flat type of package and sealed, kind of like the packaging bacon comes in. Hope that helps... it took me forever to find it the first time I went looking. Good luck!!

                Very good. Left out the chili paste because I didn’t have it on hand. Dish tended to be a bit salty so next time I will cut the salt in 1/2.

                  This is really flavorful. I'm generally not a fan of spicy foods but I was shocked how satisfying and good this was. So good, it's become a staple in my lunch and dinner rotation. I did leave out the Sambal Oelek but you don't even notice. Try it!
