Can I use olive oil instead of avocado oil?

Avocado oil is used in this recipe because it’s added to a very hot pan in the beginning of the recipe. You need to use an oil with a high smoking point or else the oil will burn. Your olive oil may burn off too quickly (resulting in burned eggs), so it’s best to use avocado oil or another cooking oil with a higher smoking point.

    Whisk together the eggs in a small bowl. Chop and add only half of the fresh herbs to the bowl. Whisk together until well-beaten.

    Heat a small nonstick skillet on high heat until it’s almost smoking. Add avocado oil and swirl the pan. Add the eggs to the pan immediately after the oil.

    Start to constantly scrape and move the eggs with a heatproof rubber spatula - almost as if you were making scrambled eggs. The egg will cook very fast and the trick here is to move quickly enough to scrape up the cooked egg so it doesn’t get browned. Adjust your heat if necessary.

    Keep doing this cooking process until there is a little bit of runny egg left to “seal” the curds together in a flat layer. Now let the omelet finish cooking on lower heat if needed. Add the remaining chopped herbs on top of the omelet.

    Cook asparagus spears quickly in your microwave. Add them to the center of the omelet. Fold the omelet in half and slide it into a plate for serving.

    I diced the microwaved asparagus, used green onions instead of chives, added nutritional yeast, black pepper, and a tbsp of parmesan cheese. Also added a leaf of crushed kale.

      I also garnished with Cayenne pepper. I replaced kosher with pink Himalayan salt.

    Great omlette, I sliced and fried the asparagus in the oil first then after a few mins add the eggs and herbs and once the bottom is feeling cooked underneath, ( lift it at a corner ) and place it under the grill to cook in on top. Put on your plate and fold in half

      YCheese omelette spinach, 2 x-large eggs About 6 to 8 baby leaves baby spinach 2 slices of bacon lower sodium 2 cups coffee along with coffee mate French Vanilla. Creamer 1-4 1 quarter cup cheddar chesse.

        in the ingredients you should write that asparagus are cooked, as otherwise people think they have to add it raw until they read description. I was wondering about the 5 minutes cooking time and when you arrive at that step you know why.

          This is good! I’m not good at making omelets so it did get a tiny bit brown even though I was really quick. I added 1/4 cup cheese and avocado on the side with a little chipotle tabasco. Great!

            I added ementhal cheese and it tasted great! It was a little brown but considering my last attempts at omelettes, it went well.

                    I never thought to put asparagus in an omelet. Needless to say I was quite surprised when it was so yummy! I will make this again but maybe put just a slice of onion in it next time as well.

                      Hi, Sorry for anglish. Can you explain to me? For a recipe, here the omelette, the yield is 1, but in the app, I'm recommended to eat 1 3/4 omelette. Do I have to make 2 omelets (6 eggs)? I appreciate your recipes, especially the under 20 minutes. Pouvez-vous m'expliquer?                         Mireille, go up to the top of the ingredients list and you will see the word “Yield”. Push the plus or minus sign for the number of people you are cooking for. The ingredient amounts will automatically change.
