AIP Beef and Sweet Potato Stew
This AIP beef and sweet potato stew is a wholesome dish perfect for chilly evenings. The combination of browned ground beef and soft sweet potato cubes pair wonderfully with the aromatic pumpkin-rich stew. This meal is one of many AIP recipes that tastes incredible and is guaranteed to win your family members’ hearts, whether they’re on an AIP diet or not.
What does AIP stand for?
AIP stands for the autoimmune protocol, an elimination diet that aims to determine food allergies and sensitivities in those suffering from autoimmune conditions. This diet is based on the Paleo diet and removes all potentially problematic foods, including grains, dairy, eggs, legumes, beans, nuts, seeds, nightshades, processed foods, and foods with chemicals and additives. This stew is a perfect example for this diet since it combines many AIP-compliant ingredients in one comforting and delicious bowl.
How can you adjust this recipe ?
Feel free to adjust this stew to your preferences as long as you use AIP-compliant ingredients. Most meats are suitable for AIP recipes, so you can swap the ground beef with ground lamb, chicken, or turkey. Avoid using sausages or other processed meats as they may contain ingredients that could trigger an autoimmune response. Instead of sweet potatoes, you can use pumpkin, turnip, parsnips, or rutabaga. You can also add a variety of other vegetables and greens like spinach, kale, fennel, broccoli, etc...
Is this meal suitable for meal prep?
Absolutely! AIP dinner recipes that are meal-prep friendly make it easier to stay on track. Store the leftovers in airtight containers and place them in the fridge for up to 4 days. When it’s lunch/dinner time, reheat one portion over the stove, in the microwave, or eat it cold.
What can you serve this Paleo stew with?
You can serve it with cauliflower rice or this with AIP tigernut bread . However, you can still enjoy this beef stew on its own since it is high in protein, fat, and fiber, making it super satiating.
