Everyone loves a good one pan meal! This dish is cooked in the fat that is released from bacon cooking, making the dish full of bacon-y goodness and resourceful so the bacon fat doesn’t go to waste. The chicken is paired with meaty mushrooms and artichokes in a delicious cream sauce. This is a great dish to scale up and keep around for meals during the week. Full-fat coconut milk was used for this recipe, but you can use cream as well.

  • Step 1

    Cut the chicken breast into 1 inch cubes and toss with olive oil, salt, a grated clove of garlic, half of a sliced lemon, and thyme and set aside.

    Preheat the oven to 375 degrees and arrange bacon on a large oven-safe skillet. Bake the bacon for 30-40 minutes or until bacon is crisp. Chop the bacon roughly and set aside. Pour half of the bacon fat into a cup and set aside.

    Heat the same pan with half of the bacon grease over medium high heat. Once hot, add the chicken to the pan in a single layer.

    Cook the chicken for 2 minutes on each side. Once both sides are brown, set aside and reduce the heat on the stovetop to medium heat.

    Thinly slice the bottom part of a leek and add it to the pan with the rest of the bacon fat. Allow to soften slightly.

    Cut the baby portobellos in quarters and add them to the pan and saute until slightly softened.

    Add the broth and add the chicken back to the pan once the mushrooms started to soten. Add the teaspoon of lemon juice and cream.

    Continue cooking on the stovetop or transfer the pan to the oven until the chicken reaches an internal temperature of 165 degrees.

    Chop the artichoke hearts and parsley and add them and the chopped bacon to the pan. Add salt and pepper to taste and enjoy!

    Yummy-I ditched the artichokes too added sour cream add the last minute for an amazing gravy that was delicious with keto bread.

      Subbed Unmeat Chicken chunks, a garden burger, and Veggie bacon strips and it came out better than I thought. Good seasoning and flavor. Didn't use artichokes.

        Who does bacon in the oven for 40 minutes? I throw it in the microwave on top of paper towels and for 6 ounces I put it in for seven minutes. It came out nice and crispy. I chopped it up and that was that.

          I used a Roto chicken so I just threw everything in the pan one time sautéed it till the chicken was warm and all the veggies were warm then I added liquids then I added the bacon then I put in Parmesan cheese to Thicken it up it was delicious

            Was really hoping for more. Needs a thickener. Cheese or something. Also, ingredients call for coconut milk while instructions call for cream. Artichokes didn't go that well. It was just ok.

              This was really good! I did fry it altogether instead of individually. Then added in broth and cream. I also did not use coconut milk. I used heavy whipping cream and added 1/4 c. Parmesan cheese to thicking it. Really good will be making it again.

                Needs some improvement. I think the coconut milk just doesn’t go with the bacon. The cooking time could be shortened by a lot if the bacon is just pan cooked instead of in the oven. That doesn’t make much sense imo. The artichoke hearts are also a bit over the top. I suggest with all that extra time you could save by not putting the bacon in the oven, you add an extra step to the chicken preparation to pound the chicken. I tried it in a different recipe and the chicken was more tender and tasty

                    Too many ingredients. Makes this a $50 meal. Also says a lemon is required but not listed in the instructions where to add.

                      Lemon is on the chicken with the garlic etc when you cube it - it’s at the start of the process.

                    Good, the next day for leftovers I added cauliflower rice with 2T of grated parm in it. Tasty!!

                      Time consuming, but yummy. Added extra salt and pepper and some spinach as I didn't have artichoke hearts.

                              You guys are funny you’re saying to bake bacon for 40 minutes and then chop it up silly I cut up my bacon half pound then I throw it in the skillet and if it starts to cook then I start stiring it around to separate the pieces. This recipe is a time waster. You guys need to revise every recipe and there’s more than one that says to bake bacon.

                                  We used cast iron pan to cook everything on the stove. Still followed all steps. I had coconut powder so I did 1 1/2 Tbs in 1/2 cup of warm water to substitute the coconut milk. Delicious meal! We plan to make on our skottle grill when we go camping!!

                                    I also cooked everything in a cast-iron pan and baking bacon for 40 minutes that’s a joke who does that? Take the half pound of bacon slice it all up throw it in your pan and then as it cooks down you separate it takes like 15 minutes at max.

                                  I just made it a dump dish put everything in at one time sautéed it all at once and then added the cream at the end. This is a good dish but they had too many steps to make it a fash dish

                                      When you bake your bacon in the oven, you don't have the splatters all over to clean up after and while it bakes, you could prep your other ingredients.

                                      I always cook mine in the oven at 425 for 20 mins…. Then once the grease cools I wrap up the foil and throw it away!! And I don’t get grease burns from it popping lol …. Btw I cook 3 lbs at a time and store it in the fridge for use through the week in recipes!!! Saves time

                                      I think bacon cooked in the oven or air fryer is much tastier as you can drain the salty water that comes out of some brands half way through the cooking. In my opinion when cooked in a skillet the bacon just absorbs all the salt water and the result is way too salty for me and it makes me too thirsty. Whatever way we can cook is about personal preferences. We should respect that. 😉

                                      I do! I think it tastes best when baked. I also love that I don't have to stay at the stove watching it, I can make other dishes or clean my house while it's cooking.
