    1-½ cup, cut pieces

  • Extra Virgin Olive Oil

  • Apple Cider Vinegar

  • Hard Boiled Egg

  • Step 1

    Add canned salmon and mayo to a medium mixing bowl. Dice the pickle and onion and add that as well.

    Mix well. In the meantime, prepare the greens by topping the with olive oil, vinegar and a sprinkle of salt.

    Top the greens with the salmon and add a hard boiled egg to the side of the plate. Sprinkle the egg with salt and pepper, if desired. Serve cold!

                Mayo has egg. I would substitute with avocado or Greek yogurt or hummus. I know yogurt will taste good.

                Since the egg is just hardboiled on the side, I would say that it wouldn't ruin the recipe to.

                Under the gun time-wise and this recipe got dinner to the hungry hubs in a quick snap. Used the Instant Pot to boil the eggs and they were ready before the rest of the salad was! Easy, cool, refreshing on a hot summer night. Sliced tomatoes and green onions on the side would be good too. Thanks for the recipe.

                                            Easy, quick and Great! Rather than Onion, I used Celery, and I had some nice filet of leftover Keto Salmon with a Lemon, Butter & Garlic Sauce still clinging to the fish - so was able to sub that for Canned Salmon. We are just 2, but I usually double/increase a recipe to 4pp so we have the leftovers/or, in case a friend comes by.

                                                Whole fat Greek yogurt, softened cream cheese, sour cream or mascarpone cheese would all be great substitutes!
