Keto Cream Cheese Mints
Cream cheese mints are one of my guilty pleasures. Fortunately, you can make a keto friendly version! I like to pipe these onto a parchment lined sheet tray as you can make them faster, but you could always make them the traditional way with a mold using granulated erythritol to coat them.

Ingredients
The Ultimate Icing Sugar Replacement by Swerve
2-½ cup
Peppermint Extract
2 teaspoon
Cream Cheese

Combine Swerve icing sugar, peppermint extract and room temperature cream cheese in a stand mixer. Beat until light and fluffy.Step 2
Place cream cheese mixture in a large piping bag fitted with a large piping tip. A large piping tip will help the cream cheese come through easier. Pipe into rosettes or stars about the size of a quarter unto a parchment lined baking sheet. Alternatively, you could roll the cream cheese into a ball and then into granulated erythritol and press it into a mold like traditional cream cheese mints. For both methods, let the cream cheese mints dry at room temperature for 2 hours. Place the baking sheet into the fridge until mints are firm before carefully removing them from the parchment paper. They should not stick together if stored in a container at this point. You should be able to pipe 50 mints. Enjoy!

Reading the comments i decided to use 1 C Swerve Confectioners Sugar. They were still very thick, probably because i didn’t use peppermint extract. I decided to use organic peppermint essential oils which i always put in my tea n sweet water. I just love it. It turned out perfect but i’m wanting to use butter ( cuz i love butter mints) which i may add tomorrow n use more Swerve maybe. My husband thought they were too sweet even only using 1 cup, so instead of adding the sea salt that i forgot to put into it, I decided to add organic cocoa powder just to lighten the sweetness but he wanted them to taste like chocolate so i had to add a bit more organic cocoa powder but was very careful not to add too much and take away all the sweetness. The original recipe is probably amazing but i forgot to add the pinch of salt. That’s probably what i did wrong , being tired, causing it to be so sweet, which isn’t bad though, that is, if you like the sweetness, n i do at times. Tomorrow after adding butter n more swerve…although they are very good as they are….. I MAY also add a pinch of salt. I’m glad I seen this recipe, I was tired n didn’t feel like making anything big, it was perfect for our sweet tooth tonight! THANK YOU SOOOO MUCH!!!❤️

Cane out really good. I have to keep it in the freezer or it gets too soft. But it is summer here so it is hot. But love the taste and the texture.

Used granulated Erythritol instead of Swerve. 2 1/2 cups was way too much. Too sweet. Will use Monk fruit extract next time and only 1 1/2 cups. Any flavor of drops works. Used lemon. Good snack when you're controlling hunger and carbs.

Wayyyyy too much mint!!!! And the texture was a little off for me

Very good, but next time I make them I might try the granulated swerve...I miss the texture in the traditional version.
