Ingredients
Brussels Sprouts, Raw
4 sprout
Bacon
2 slice - 6" long
Olive Oil
1-½ tablespoon
Lemon Juice
1 tablespoon
Red Cabbage
½ cup
Green Cabbage
½ cup
Red Onion
¼ small
Salt, Sea Salt
¼ teaspoon
Black Pepper
⅛ teaspoon

Step 1
Heat half a tablespoon of olive oil in a skillet over a medium heat and cook the bacon through until crisp and golden. Set aside to cool.Step 2
Slice the base from the sprouts and discard. Thinly slice the sprouts, onion and cabbage and add to a mixing bowl. Toss to combine.Step 3
Crumble the bacon over the vegetables and season the slaw with salt and pepper. Mix to combine.Step 4
Whisk together the olive oil and lemon juice and drizzle it over the slaw, stirring well to coat.

Can prepackaged coleslaw be used?

I'm sure you could, but there are carrots in bagged slaw, so adjust your macros accordingly.

I had it without onion (didn’t have any in the house) and added two cups of mixed green leaves. Excellent!
