Combine quartered mushrooms, diced celery, and ground chorizo in a pan over medium heat. Break the sausage up in the pan occasionally as you cook with a lid on. Cook for about 6-7 minutes - until the chorizo is crumbly and the mushrooms and celery are tender enough to have absorbed the flavors of the chorizo.Step 2
Turn the heat down to low and stir in chopped arugula. Stir until the arugula has just wilted. Serve immediately while hot.
