Recipe Steps

  • Step 1

    Melt the coconut oil and add to a mixing bowl along with almond butter and syrup. Whisk together to combine until smooth.

    Roughly chop the almonds and macadamia nuts and add to the mixing bowl. Add the flaked almonds, desiccated coconut, coconut flakes, ground almonds and chia seeds. Mix together well to combine.

    Line a small baking dish or mould - roughly 3 x 6 inches with baking paper.
  • Step 4

    Spoon the nut mixture into the lined mould and press down firmly.

    Transfer to the freezer for 30 minutes to set, then slice into 5 individual bars. Store in the refrigerator until ready to serve.

        Is the almond grounds the same as almond flour? I also don't know what in the world desiccated coconut is. Help

        Scrumptious! I skipped the syrup and used maple butter instead, substituted crunchy peanut butter for the almond butter, used shredded coconut vs desiccated. Added 1 tablespoon unsalted chopped peanuts, 1 tablespoon flax seeds, 1 tablespoon ground flax and a teaspoon of chopped 100% cocoa. Creamy & delicious. I cut into 12 smaller bars as a great snack. Definitely a staple from here on in.

        I made this recipe fir the second time adding some chopped walnut and and a few Lilly’s dark chocolate chips. They are a great hit the spot snack. Will definitely make over and over again!

          This is wonderfully yummy! I used Chunky peanut butter instead of almond butter to add variety. I also forgot to put the put coconut flakes in the recipe so sprinkled them on top and pressed them into the bar before freezing. I ate a half of one before a 6 mile run and wow!!! ENERGY! I am going to put protein powder in the next batch and handle 8 miles like a BOSS!

          You could also add cocoa or sugar free chocolate chips, yummy. I found the portion size fine.

          Was this recipe x2 as mines not nearly as big as the slab in the pic ?? This reminded me of making the birds a suet block for winter feeding lol .

            I know they are put in freezer to set up. Would they keep well for longer periods of time in the freezer? Like maybe a couple months?

              Is there a way of just incorporating some stevia sugar melted in 1 tblspn of hot water instead of syrup, and left to boil before adding?

                Where do you get the syrup from? I used Stevia but it leaves an aftertaste. Substituted ground lin seeds for chia and hazelnut butter for almond. Next time I’ll try to stick to the actual recipe!

                  You could also try Swerve erythritol sweetener. I use it in all my baking and have never had a problem with aftertaste. Although if you are sensitive to fodmaps it's not an ideal choice.

                Would these travel well? Planning a long trip and want some safe foods to pack in case my options are not the best.

                  I wrap two in a dishcloth and pack into my checked luggage. By the time I arrive from San Diego to Sacramento, get the rental car and drive to hotel, which is about 4 hrs total they are in need of refrigeration. Any longer, I fear they would fall apart. I plop in the room refrig and they are good to go for the next two morns.

                  Hi, I don't believe they would travel well unless they were kept very cool - as the coconut oil would melt and the bars would not hold very well.
