This recipe is perfect for beginner cooks and only needs 10 minutes of active work. The ingredients for this low-carb casserole are similar to any other Keto Fajitas. It starts with a base of protein, in this case, grilled chicken mixed with cream cheese. It is then topped with sauteed onions and peppers and sprinkled with tasty Mexican blend shredded cheese.

This fajita casserole recipe is a huge crowd-pleaser. It is a perfect addition to your gatherings and home parties. This recipe serves 4 people, but you can double or triple it to feed more.

The short answer is yes; fajitas are Keto, but this depends on the ingredients used and their quantities. For example, onions are a staple ingredient for making fajitas; however, they are very high in carbs and must be used in small amounts. Another ingredient to look out for when making fajitas is seasoning. Store-bought taco or fajita seasoning often contains high-carb filler ingredients such as cornstarch. The best option would be to make your seasoning mix from scratch or add each ingredient separately, as we did in this recipe.

  • Step 1

    Preheat your oven to 350 degrees Fahrenheit. Place the chicken breasts on a cutting board and butterfly them (slice ¾ of the way horizontally)—season with salt and pepper on both sides. Add 1 Tbsp of olive oil to a non-stick skillet, and place over high heat. Cook the chicken breasts for 2-3 minutes on each side until golden, then transfer them to a plate.

    Rest the chicken breasts for 5 minutes, chop them into 1-inch cubes, and add them to a bowl. Mix in the cream cheese, ¼ cup of shredded cheese, and ½ tsp each paprika, cumin, and oregano. Taste and adjust seasoning, set aside.

    Place the skillet over medium-high heat, and drizzle 2 tbsp of olive oil. Add the onions and cook them for one minute. Add the red bell pepper, green bell pepper, 1 tsp paprika, ½ tsp cumin, ½ tsp oregano, ¼ tsp black pepper, and ¼ tsp salt. Cook for 2-3 minutes.

    Transfer the chicken mixture to a medium-sized casserole dish, and distribute it evenly. Spread the cooked onions and peppers over the chicken. Finally, sprinkle ¾ cup of shredded cheese on top.

    Bake for 25-30 minutes, or until the cheese is golden and bubbly. Let the casserole cool for 10 minutes. Garnish it with sliced avocado, coriander leaves, and sliced jalapenos. Serve immediately.

    Will add this to our weekly meal! Simple and quick. Made this as writen but will tweak it to suit our needs as follows. - will butterfly the chicken but will cut it up in pieces and then fry -will add more spice to the peppers (could even go with 2 tsp of the spices) for more flavor -if you want some spiciness chop up jalapeño peppers and add to the pepper and onion mix - use frozen peppers to save time -1 cup cheese was a bit too much for us, so you could reduce to 1/2-3/4 shredded cheese - current size indicates that this is a 3-4 serving recipe depending on the size of your breasts and I found that it made about 3 servings

              Flavor is spot on. Chicken dried out in oven and all juices are just making a pool in the casserole. Probably cook higher for shorter time next time. But it's a great recipe. I found the portion very filling.

                This for sure doesn’t make 4 servings. By itself, maybe 2, but you can squeeze 3 meals out of it with some other sides. A casserole dish is far too big. I fit the whole thing in a bread tin. Double the portions if you want a full casserole.

                    I like the simplicity of this recipe. I only used 1T oil as I cubed the chicken while partially frozen. The pieces cooked up fast. Then cooked the remaining onions and peppers in the same oil. The cumin will be decreased in future meals. I did add 4 ounces of Ortega diced chiles Nummy

                      This was delicious and easy to make. I shrunk it down to 1 serving and cooked it in a tiny casserole dish. The only thing I might switch up next time is to try shredded chicken so it becomes part of the cream cheese mix rather than covered in it.

                        With shredded chicken and a 1/2 cup sour cream. I mix the sour cream and softened cream cheese together with the spices, then mix it all together with vegetables. It is delicious..

                              Delicious, all the family enjoyed this dish however I doubled the recipe. I weighed out 195g for myself and there was just enough for 3 other hungry adults who added wraps to it. The original portions would defo not feed 4 people.

                                    This has become a weekly staple for me. I don’t like peppers so I substitute with crimini mushrooms and zucchini. I also make it dairy free using daiya cheese and dairy free cream cheese. It’s fantastic!

                                                      My son is not on Keto; however is eating healthier. He loves this. He asked me to safe the recipe. I did add 1/2 tablespoon of sour cream for him. I also loved this dish. Can't believe how I can eat like this and still lose weight.
