  • Step 1

    Line 2 ramekins or small pudding bowls with the individual slices of salmon. Overlap the salmon pieces as you go, ensuring the bowls are completely covered and there is enough salmon overhanging the bowl to cover the base of the parcel.

    Add the cream cheese, chives, lemon zest and half the lemon juice to a large bowl. Season with salt and pepper.

    Beat the mixture together until smooth and fully combined.

    Reserve half a cup of the cream cheese mixture to one side and divide the remaining mixture between the two salmon lined ramekins, filling ¾ full. Place in the fridge to chill.

    Add the avocado to a food processor with the remaining cream cheese and lemon juice. Blend to a thick and creamy paste.

    Remove the ramekins from the fridge and spoon the avocado mixture on top of the cream cheese, filling the bowls to the top.

    Fold the overhanging salmon over the filling, sealing the mixture within the parcel.

    Transfer to the fridge to set for 3-4 hours.

    I love salmon and cream cheese. This had too much lemon juice for me. I may try it again with less lemon and eat it like a snack with a salad or cucumbers like the author suggested. The avocado part is really good. Thanks for the recipe.

      This is a fun decadent dish. Bit of labor intense and definitely for a cream cheese lover. Very good and pretty. It definitely needs a acid relief with quick cuke vinegar salad and some spinach made this very good.

            This was not my favorite due to the sheer amount of cream cheese. I ended up taking all of the normal chive blend out and just ate the small amount mixed with avocado. Needs a better fish to cheese ratio, in my opinion. It does look pretty though.

                  Hello, the recipe nutrition is calculated at 4 servings, being half a parcel per person. So the two parcels photographed would be divided into 4 portions. I hope this helps!
