AIP Peach Coconut Crisp

This AIP dessert is the best way to utilize summer peaches as a mouth-watering and healthy treat. Paired with a golden coconut crumb, this peach crisp is sweet, toasty, and absolutely addictive. It is quick, easy to prepare, and only requires a handful of ingredients. Not only is this dessert delicious, but it is also gluten-free, nut-free, and perfect for the AIP diet.

How to prepare a crumb suitable for AIP recipes?

A crumb is an essential component of any fruit crisp dessert. This version is crunchy, rich, toasty, and uses AIP-friendly ingredients. In a bowl, mix coconut flour, shredded coconut, and cinnamon. Then, add melted coconut oil and maple syrup, and mix until a rough crumble forms. Add this crumb to the chopped fruit and bake until golden and crispy.

What other fruits can you use for this dessert recipe?

AIP desserts are best prepared using fruit in season since they are sweetest at that time. You can prepare this crisp using blueberries, strawberries, raspberries, or a mix of these. This dessert is also delicious when prepared using other stone fruits like cherries, plums, or nectarines.

What is the size of the baking dish used?

We have used a small baking dish measuring 20cm x 20cm (8”x8”). You can also use individual ceramic ramekins or mini cast iron pans.

Serving suggestions:

Desserts with crumbs are best when served with rich and creamy toppings like whipped cream or ice cream. We have served this peach crisp with a dollop of whipped coconut cream, but you can also serve it with AIP-friendly coconut ice cream.
