  • Step 1

    Add all the ingredients to a food processor and blend until smooth and creamy.

    Line a 6 x 4 inch dish or mould with baking paper. Pour the mixture into the lined dish and transfer to the fridge for a minimum of two hours or until set.

    I was disappointed in this recipe. It just tastes like pumpkin flavored coconut oil. I kept re-checking the recipe to see if there was some important ingredient I was missing. (Before the batter chilled, I actually sprinkled some erythritol on the top to give it SOME kind of flavor.) It’s going to take me a long time to eat them...

      Lakanto is not available in my country. Is there a suitable keto substitute?

        Use equal parts water, Swerve granulated sugar replacement, and Swerve brown sugar replacement and a maple flavoring such as Mapleine. An example is 1 c. water, and 1 c. of each of the sugar replacements. Boil water and add the two sugar replacements until dissolved, and the maple flavoring. For the 1 c., 1 c., 1 c., recipe, Mapleine recommends you use 1/2 t. Mapleine, but you can make the syrup as strong or light flavored as you would like by adjusting the amount of Mapleine.
