Step 1
To a small bowl, add the gelatin powder and water. Whisk until combined. Set aside for 5 minutes to thicken.Step 2
Grate the mozzarella cheese and add it to a microwave-safe bowl. Transfer the bowl to the microwave, and heat the cheese for 20-30 seconds until all the cheese is melted. Whisk to ensure that solid pieces remain.Step 3
Quickly add in the egg yolk, and whisk vigorously until the mixture is homogeneous. Microwave the gelatin in 10-second intervals until completely dissolved. Add it to the cheese and mix again. If the cheese has cooled ( making it hard to whisk), microwave it for 10 seconds before adding the gelatin.Step 4
Place the cheese dough between 2 pieces of greased parchment paper. Press the dough to flatten it, then gently roll it out until 1/8 inch thick. Place the cheese dough sheet in the fridge for 30 minutes to set.Step 5
Take the dough out of the fridge, and cut it using a pizza cutter. Slice it into ½ inch wide noodles. Divide the noodles into 2 portions.Step 6
To serve, toss the noodles in warm water, drain, then transfer to a plate. Top it with your favorite sauce. Serve immediately.

Absolutely awful. Nothing like pasta, dissolves into globby mess when warm pasta sauce added. Just taste like sauce flavoured cheese.

This is NOT KETO! That serving size is absolutely laughable! No one is going to ONLY eat 2.4oz for an entire entree!!!! Please.

You realize that 2 oz of pasta is a normal serving size, right? Americans eat too large a portion of pasta. In Italy, pasta is mostly served as a side or first course; it is never a main dish.

Pretty good! Mine turned out with a slight grainy texture... but it may be that I didn't mix it quite right. I will definitely try again. It tastes really good.
