Can I substitute the psyllium husk powder?
No, the psyllium husk powder is critical for the formation and structure of this low carb bread. Do not try to substitute it with ground flax seeds or anything else. You can easily find psyllium husk powder through online retailers like Amazon and will use it again for other Keto baked goods.
Are raisins Keto?
There is technically no such thing as a “Keto” food, so as long as you keep your carb limit where it needs to be for your body to be in Ketosis, raisins are perfectly acceptable.
How long does this bread take to bake?
Keto, Paleo, and low carb bread do best when given a long time to bake. Since there are raisins in this dough, be sure to tuck them into the dough before baking, so they do not burn. If you are questioning whether your soda bread is done baking, err on the side of caution and bake it for a few extra minutes (Keto bread tends to collapse if they are underbaked at all).

Step 1
Preheat an oven to 350 F. Combine the almond flour, psyllium husk powder, baking powder, and Swerve together in the bowl of a stand mixer fitted with a paddle attachment. It does not need to be well mixed at this point.Step 2
Heat the water until it is boiling. Then add the apple cider vinegar to the water and pour this mixture into the stand mixer with the mixer on low. Once all the water has been incorporated, turn the mixer on medium speed and wait until the dough stiffens. Once the dough stiffens, add the eggs and beat on medium speed until well combined.Step 3
Add the raisins and mix well until incorporated. Do not worry about overmixing. Since this is a low carb dough, there is no gluten in here that can be overworked.Step 4
Remove the dough from the mixing bowl with a plastic bowl scraper (to make sure you remove every last piece of dough from the bowl) and shape it into a round loaf. Place the loaf on a parchment lined baking sheet. Use a sharp knife to cut a plus sign into the top of the loaf. Press in any raisins that are on the surface of the dough so they do not burn in the oven.Step 5
Bake the loaf for 60 minutes at 350 F and then turn the oven down to 300 F and bake for another 15-20 minutes until the loaf is cooked through. Allow to cool completely before slicing.

I followed the recipe exactly and the resulting bread was delicious! I didn’t realize the serving size was 1/20th so I accidentally ate a double portion, but it was worth it! I still keep looking at the first pic in the recipe and wondering if the butter would make it even better...

The first picture shows butter in the bowl, but the recipe doesn't mention butter.
