If you cannot source any ready prepared rice, then it is very simple to make yourself. Simply use a box grater to shred/grate cauliflower florets into rice-sized pieces.     Finely dice the onion and thinly slice the garlic. Heat the olive oil in a medium saucepan over a low heat. Add the onion and garlic. Sweat gently for a few minutes until tender and fragrant.
