Keto Peppermint Fudge

I love peppermint flavored things around Christmas time and what better way to enjoy it than in fudge! This super creamy, indulgent treat is delightfully refreshing thanks to the peppermint flavor. Simply mix all the ingredients (only 4 ingredients!) together in a bowl, just be sure to use coconut oil in the solid state not liquid state when creaming the ingredients together.

  • Coconut Oil

  • Step 1

    Cream the coconut oil and powdered erythritol together in a small bowl using a hand mixer. You must use solid coconut oil to make this work!

    Add the cocoa powder and peppermint extract and blend until just combined.

    Line a 3 cup rectangular glass container with parchment paper, cutting the paper to size to allow the paper to hang over the sides.

    Scoop mixture into the lined glass container and place in the fridge until firm about 1 hour. Use a paring knife and run the knife around the edges to loosen the fudge and use the parchment paper to pull the fudge out. Let the fudge come up to temperature for a few minutes. If you cut the fudge too soon, it will crumble. When serving, bring the fudge out of the fridge for a few minutes before enjoying!

          mint is usually made up of spearmint and peppermint. then it would taste more like a thin mint or mint chip ice cream imo

            I made some modifications and now really like it! I felt like it needed some salt to give it a real fudgy flavor, so put in half a tsp. of pink salt and a tbs. of butter, which made it a little creamier. Next time I make them I'll use a bit less sugar, adding the butter cut it down a bit. Used a silicon ice cube tray that holds a tbs. each and made 24 large gumdrop sized candies.

                My first stab at a keto dessert, and these turned out great! I used a little more mint, because I love it, and topped with a pinch of sea salt, delish! At first taste I didn’t think it would be sweet enough for me, but by the third nibble, I was loving it! Thank you for the recipe.

                  I just put some in the freezer. I licked the spoon and loved it! Instead of having to cut them I used a silicone brownie bite pan that holds about a 1/2 tablespoon. I can’t wait till later! This is a definite keeper! Thank you for this recipe.

                        Am I supposed to melt the coconut oil first or just mix it all together?

                          Start with solid coconut oil in order to cream it or else texture won't be right! Hope that helps.

                        Can you omit the peppermint and add walnuts and vanilla?

                          Of course! I would add the walnuts to the app separately however to account for adding them to the recipe. So if you had 1/2 c divide that amount by number of servings to get the amount to add

                        I am wanting to make this right now however I only have the granular version of Swerve...is it ok to use that instead of the confectioners version?

                          Blitz the granular sugar in a blender and it will become a powder, then use as the recipe states!

                          I used Lakanto granular sweetener with Monk Fruit but I powdered it in my blender. It somehow still left a crunchy granular taste but the fudge was still very good. I am going to try Swerve next to see how it turns out. Love the recipe.

                          I'd be concerned the powdered would not dissolve and be crunchy in the fudge but you could give it a try!

                        My wife and I are new to the keto diet and, therefore, were looking for some recipe out there that would satisfy our sugar and chocolate cravings. This keto fudge recipe did the trick. The first time we tried it we substituted 'Splenda' for 'Swerve' but it was just a guessing game as to how much 'Splenda' to add to the mixture. The 'Swerve' fudge tasted more like the real thing and I think we will keep this recipe as one of our favorites. Thank you for sharing this recipe.

                        Ultimate icing sugar replacement? Is this an item I can't find or is it just they're confectioners sugar substitute?

                          I just use whatever granulated sweetener we like and run it through the bullet to make powdered. Works great without having to buy a specific powdered sweetener.

                          You are correct! It's the confectioners sugar substitute. They call it icing sugar sometimes. I hope you try this!
