Delicious , one of the best cauliflower mash I’ve made, be just to completely purée it.

Can this recipe be made in an instant pot instead of the oven?

I even forgot to top with the cheese and it was OUTSTANDING! I’ll be making this for Thanksgiving!😍

Did not think this would be tasty because most cauliflower mash I’ve had still tastes like cauliflower and has a weird wang. I was wrong, this was FANTASTIC!!! I used mozzarella instead of chihuahua cheese and just browned the top. So. Very. Good.

Has anyone tried making this ahead of time?

Yes, it stores well in the fridge for about a week. Just heat up in the microwave.

This was excellent! I didn’t add the chihuahua cheese or bake it but it was good! If you close your eyes, you’d think you were eating potatoes

I don’t have a food processor don’t really wanna buy one will a hand mixer work or something else

You could use a blender. It does need to be blended at the very least to get the consistency right. There is also the option of a stick blender. Those are very inexpensive if you don't have a blender.
