  • Cauliflower Rice

    Cauliflower Rice

  • Cream Cheese

    Cream Cheese

    2 ounce

  • Parmesan Cheese

    Parmesan Cheese

    ¼ cup, grated

  • Coarse Kosher Salt by Morton

    Coarse Kosher Salt by Morton

    ¼ tsp

  • Queso Chihuahua (Chihuahua Cheese)

    Queso Chihuahua (Chihuahua Cheese)

    ½ cup, shredded

  • Sour Cream

    Sour Cream

    1 tablespoon

  • Chives

    Chives

    1 tablespoon

  • Step 1

    Preheat an oven to 425 F. Microwave the cauliflower rice for about 5 minutes until warm and kernels separated. Place the rice, cream cheese, parmesan and salt into a food processor and blend until mixture is nice and creamy.

    Place in an oven safe bowl and spread smooth.

    Top with cheese.

    Bake for ~10 minutes until cheese is melted and edges are turning brown.

    Top with cold sour cream and fresh chopped chives. Serve immediately!

              Did not think this would be tasty because most cauliflower mash I’ve had still tastes like cauliflower and has a weird wang. I was wrong, this was FANTASTIC!!! I used mozzarella instead of chihuahua cheese and just browned the top. So. Very. Good.

                    Yes, it stores well in the fridge for about a week. Just heat up in the microwave.

                  This was excellent! I didn’t add the chihuahua cheese or bake it but it was good! If you close your eyes, you’d think you were eating potatoes

                      I don’t have a food processor don’t really wanna buy one will a hand mixer work or something else

                        You could use a blender. It does need to be blended at the very least to get the consistency right. There is also the option of a stick blender. Those are very inexpensive if you don't have a blender.
