Step 1
To a food processor, add the almond flour, salt, onion powder, egg white, and butter. Grate the mozzarella cheese and add it in. Pulse until a wet dough forms.Step 2
Transfer the dough to a piece of cling film. Wrap it and place it in the fridge. Let it chill for 1 hour.Step 3
Preheat your oven to 200C/400F. Take the dough out of the fridge and place it on a piece of parchment paper. Roll out to ¼ inch thick (1/2 cm).Step 4
Cut into rectangles measuring 2 by ¾ inches ( 4cm x1.5 cm). If the dough starts sticking, transfer it to the freezer and let it chill. Space out the dough pieces from each other.Step 5
Slide the parchment paper onto a baking sheet and transfer it to the oven. Bake for 16-20 minutes until golden and crispy. Take the sheet out of the oven and let the crackers cool.Step 6
Place the cream cheese into a piping bag and cut off the tip. Cut the cherry tomatoes in half cross-wise and slice the cucumber into thin 1/2 circles. Cut the chives into long thin strips.Step 7
Layout the crackers onto a flat board. Pipe a generous strip of cream cheese along with the crackers. Secure half a cherry tomato at the tip, two cucumber slices at the sides, and the chives behind the tomatoes.Step 8
